The highest performance I can reach is 5.1ghz at 1.375 volts. Going to 5.2 or 5.3 causes instability. Is this acceptable or should I continue adjusting? I'm running a H100i hydro series cooler on a Maximus 12 hero mb.

In reality, using that cooler might be too much for the setup. I really question if an H100i can manage the heat with a full 5.1Ghz OC at a voltage that also ensures full stability. It seems highly improbable. Either your voltage is too low to maintain thermal balance while staying stable, or you're not meeting thermal requirements. To be honest, it's only possible if you have an unusual sample of a 10900k, but that's unlikely.

The typical temperature ranged from low to mid 60s throughout the test. It reached a peak of 75 for a short time.

The average temperature is based on what data source? We're tracking thermal performance with which tool? And which specific test were you conducting?
