It could be a fun idea, but adding another 1 tb M.2 NVMe SSD might strain your PCI lanes if you already have one and two others. You should check your system limits before proceeding. As for needing a faster CPU, it depends on how much extra workload you're planning.

You can include a lot of memory without concern, as long as the slots remain available.

With a Z370 chipset, the M.2 ports link to the chipset rather than the CPU, preserving your 16x lanes for the GPU.
