Speccy says the CPU is cooler than my ex girlfriend's heart. It rarely goes above 70. My GPU, though, hit 80 yesterday. I plan to check the temperature using the Radeon software today.

Your temperature might be an issue. Is it 80°C during gaming? The crashes suggest a thermal shutdown risk. Are you applying an overclocking utility? Did you clean the used card before installation? Consider reapplying thermal paste. For upgrades, I’d prefer a 3600 model and focus on other components like the monitor. A 3700x could help with video editing, and a GPU upgrade would be beneficial.
