Plague Tale: Innocence Lost, Assassin's Creed Odyssey, Bioshock Series, Deus Ex: Mankind Divided, Fallout New Vegas with mods (many top creators thrive here), and Kingdoms of Amalur: Re-Reckoning are popular titles.

I really disliked this game. It seems to be my next choice, though it feels very old-school and only slightly updated. Still, I might give it another shot.

You can get a good deal using Ubisoft's client and coins, especially if the game isn’t on sale, or through platforms like G2A or GOG. Steam often has sales several times a year if you wait. Regarding KOA: Re-Reckoning, I’m in agreement. I own the original, but it looks like you can no longer buy it via Steam—which is disappointing. It would be much cheaper to get the same content elsewhere. I’d also suggest Mass Effect Andromeda (it seems to perform best on PC) and Shadow of the Tomb Raider. Someone mentioned Immortals Fenyx Rising; I wasn’t aware it was available on PC, but I have it on Switch and can definitely recommend it. The same goes for Hades.

For open-world, narrative-driven RPG experiences I suggest The Division 1 and 2, Batman: Arkham Knight, or Shadow of Mordor. Each offers rich storytelling, and you can play The Division for free on the Ubisoft website. Mordor is available via Game Pass if you own it. Batman tends to be discounted periodically as well.

I believe many individuals are overlooking Valheim.
