I suggest trying Valheim. As noted, Minecraft and/or Terraria work well for beginners. Here are a few additional picks (any order you like). Abiotic Factor Palworld Volcanoids

Valheim and Terraria are incredibly enjoyable! The physics in Valheim could benefit from some improvements, though it remains a great experience!
