Windows and Mac setup – gaming PC running Windows 7, MacBook Pro with OS X 10.9 Mavericks. Thinking about upgrading to 10.10 Yosemite once school ends (just a week away), but I’m holding off for now. Honestly, I still like the feel of Mavericks, kind of like how I like W7’s Aero compared to W8’s Metro...

It seems like you're pointing out a misunderstanding. Many people use multiple operating systems. You weren't clear about what it means to "use" them. Why pick one over another? Your usual choice is Windows 7, with Ubuntu for other tasks.

Used Windows 7 Ultimate on both my desktop and laptop, but after testing 8.1 I couldn’t revert to 7. Now I’m using 8.1 on both devices. Still undecided about the servers—I’m thinking Windows 8.1 or Windows Server, and the other will run the best Plex solution.
