If you need your PC to stay current even when you're away, standard Windows 10 update settings should work well—just make sure to configure your active hours. I've set this up myself without running into problems or overcomplicating group policy. The only setting I enabled was disabling auto-restart during active hours, though I'm not entirely certain about that.

Windows doesn't automatically download, install, or restart for updates; I must manually click the check for updates button.
