I'm planning to enhance some of my networked gadgets from the current 1gb setup to 2.5gb. I’m not sure if I should go all the way yet. My idea is to install a 2.5gb NIC in my UnRaid box, use adapters for the Plex Server (i7 Mac Mini) and laptop, connect everything to a 5-port switch, and then link that switch to my HP Procurve 2810-24g managed switch. All the extra ports on the switch should work together at 2.5gb while keeping the rest at 1gb, right? I hope this makes sense. Thanks!

All features on the 2.5Gb switch can utilize the additional capacity, while reaching any device on the 1Gb switch will restrict it to 1Gb performance.
