My GPU requires a 12VHPWR connector and an adapter for connecting to the PSU's 2x 8 pin PCI-e slots, but I'm unsure if that setup would work with the Strimer. I'm considering using the Lian Li Strimer and believe I need a cable that connects directly from the Strimer to the 3x 8 pin slots. Should I use three separate PCI-e connectors or only two as suggested by the adapter? Are there other Lian Li Strimer cables suitable for this configuration?

Welcome to the forums, newcomer! You should be ready to go, just leave one of the 8pin adapters unpopulated. Ideally, I would have considered a PSU with native 12VHPWR support so you wouldn't have to handle a bunch of cables and Lian-Li make a harness that connects from the PSU to the GPU without any adaptors, i.e., this one.

So just to get a little visualization!
It goes
GPU connected to Lian Li Strimer 12VHPWR to 3x8 Pin --> 2x 8 pin from PSU connects to to 2 of the 3 8-pin adapters, with the 3rd not being used.
and that's because the GPU only draws enough power to make use of 2 of the PCI-e spots in the GPU and a 3rd would be pointless?
For some reason this has been breaking my brain to think about lol

Forgive me if I'm mistaken, but the PSU the OP referenced is ATX 3.0 and includes a 12VHPWR cable, wouldn't it be preferable to opt for the Lian Li Strimer V2 cable they mentioned?
