Hello, you want to set up only Windows on an old Mac Pro without any Mac OS or extra partitions. I checked recent EL CAPITAN discussions and found no current support for that setup. It might be possible using older methods, but it’s not straightforward today.

You can safely skip the macOS version after installing the drivers. The specific Mac Pro model matters—1.1, 2.1, and 3.1 have different requirements. These models require firmware adjustments for retail 64-bit Windows images, so don’t worry about compatibility issues. Remember to run DiskPart before beginning the Windows installation, since these systems won’t boot in UEFI mode and macOS uses GPT by default.
