When using Windows with a Microsoft account, you must set up a local user. You can later delete the Microsoft account, but be sure to transfer all necessary files from its folder first. If you're relying on a local user account and only have a Microsoft account for the Microsoft Store, you'll need to remove the Microsoft account from your local account. This involves navigating to Settings -> Accounts -> Email & accounts. However, this process is binary—you can't selectively disable the account for certain apps like Edge while keeping it active for others.
