You can change your username right now, even if you have an email address. Just press the key for "Win" plus the key for "R". it might be for an old Win 10 guide since the newest version doesn't have this feature. based on what I know, you just take a picture, pick a file to upload, then go to manage my account from there where it opens up accounts.microsoft.com in your browser (so you can change how your name looks) and also sign in with your local login instead, that's everything.
