I’m curious about the differences between playing Hitman 3 with all DLCs versus without them. Anyone have some advice?

Purchase the full game with all episodes, the edition that includes every mission. Most of the DLCs are skin packs that aren't worthwhile, or access passes that let you play Hitman 1 and 2. The access passes and individual Hitman 3 episode prices on Steam are excessively expensive and not justified.

The term "episodes" refers to the individual segments within DLC content. Not every DLC includes all episodes; some may be optional or limited.

No, episodes aren't considered DLCs. This latest style of Hitman games follows an episodic format. They start with just a few missions and then add more gradually. Now all missions are available, so make sure you're getting everything included in one purchase.
I personally favor the older Hitman titles that had many missions. The newer ones have far fewer, and you need to find creative ways to complete each one using different tactics. I believe Absolution was the final strong Hitman game.

I discovered two sites offering the game in my country, one with Hitman 3 update 3.10 and another with update 3.17. Does this indicate additional episodes and missions?

Wow you just missed the special on steam a few weeks back, That's when I picked up my copy... got the whole trilogy including everything so far.
Had to wait a bit to make it complete, I added the missing DLC's to my wish list and soon enough that went on sale too.
If I had more money, I would have bought it at full price, really great game...So much content and now that it is better compressed file format, it’s even better.
(160+GB's VS 66GB)
I’d prefer the steam version for convenience and other advantages.
HiTMAN Trilogy plus all the correct DLC packages, I’m going to spend a long time working on it, even if this new content for the purchased version keeps coming out in the future.
I’m also thinking that the Absolution style Hitman works best for a few days or less of continuous progressing gaming, and builds momentum much better for the gamer.

I have no idea, but usually the description of the game shows what missions are contained. If not, ask the vendor if you can. As a general rule it's best to get the latest version though, and I really think since it's been a while since all episodes have released, any full priced game version should have them all. Any updates beyond that are going to be little fixes here and there to patch the game.

I received the game today and wrapped up the story in just 3 hours :/ such a quick story! Only 5 or 6 missions, the last one was on the train...
It was a great game but short.
