I’m planning to purchase my first gaming setup (around $800). Can I pair dual-channel memory with a 2700X, ASUS B450-Plus Prime and Corsair Vengeance 2x8GB at 3000MHz? I’m curious since I’ve heard Ryzen processors perform better with dual-channel configuration.

Yes, that works fine. Dual channel is the top choice for Ryzen processors. It refers to two memory sticks operating together, such as with 2x8GB. The motherboard isn't ideal for a Ryzen 7 2700X. An MSI B450 Gaming Plus (MAX) would perform better.

Yes, the M.2 slot supports RGB connectivity for the NZXT H510i.

The NZXT enclosure needs a USB 2.0 front panel connector, and this MSI board (or similar) provides it
