2 x N is better than 1 x N, because it enables dual channel, which doubles available bandwidth. On a consumer platform there's generally no advantage to 4 x N, since you'll still only get dual channel. However, 4 sticks are harder to run for the CPU's memory controller, so there's actually a chance it'll no longer overclock to the same XMP speed as before. On server platforms you can have things like quad- and even octa-channel. Of course if you want the absolute maximum amount of RAM your computer can support, you might need 4 sticks, if the capacity isn't available with 2 sticks.
