You can do almost anything with that combination. Newer AAA games such as Cyberpunk simply drop to 720p in the game, and you'll be fine. It's tough to suggest games when we don't know your preferences.

I enjoy adventure games with missions. I want to play Red Dead Redemption 2 but worry it might be too demanding on my device.

720p high or 1080p medium delivers 40-50fps.
That's perfectly acceptable for a game such as RDR2; it's not especially quick.
Definitely worth trying on your system specs.
