You need at least two sticks for dual-channel usage, offering double the bandwidth compared to single-channel (around 1.8x, though realistically closer to 2x). Two 8GB sticks are clearly superior to one 16GB stick.

More channels offers a larger performance boost compared to higher ranks. I believe dual-rank 8GB DDR4 modules aren't currently being produced.

They're not being produced for regular buyers just yet. I've noticed dual-rank and quad-rank options for server DIMMs, but those wouldn't fit well in a consumer setting.
