Help with OS
I was overly focused on the upgrade and overlooked backing up the old SSDs. Can I remove all the data from them so I can reinstall Windows?
Is the storage protected with encryption such as BitLocker? If not, you should simply connect the drive to the new system and transfer all data. Should it be encrypted, you might need to revert the SSD to the previous setup, restart it normally, and then move data from there.
You might also attempt to boot from that storage device; Windows could start even if it's connected to another motherboard or processor. Once inside Windows, you'll likely have several ways to transfer the data. If that doesn't work, simply restore your previous setup on the old system and restart from there. If neither solution succeeds, providing details about your current and previous configurations would assist in diagnosing the issue.
