I believe it should be okay. Most games run smoothly on 8GB, unless you're working with heavy video or image editing, then 16GB would suffice. A few points to keep in mind. If you're using Ryzen or the latest Intel models, they won't support Windows 7 anymore due to lack of updates. There are possible solutions, but I've spent the past couple of days trying them out and ended up needing a Windows 10 upgrade. Also, after upgrading my system, my 3000mhz Corsair RAM is only at 2133mhz, so it's worth checking forums for compatibility before purchasing.

Whatever RAM you choose, make sure it fills every slot. Single-channel isn't ideal, dual-channel works fine, and quad-channel is overkill.

For gaming and light tasks, most people only need games that require more than 16GB—though a small part of that includes heavily modified open-world titles. You don’t usually need over 16GB of RAM right now for typical players. I rarely reach 12GB while playing multiple browser tabs, which is often the biggest RAM drain for me.

You misunderstood consumer boards and processors. Four slots don't mean quad channel. HEDT systems, threadripper setups (including server-grade) do support quad channel. Users with X570 mobos only experience dual channel. Regarding Intel and AMD, you're right—single channel reduces performance, so aim for at least two slots to enable dual channel. Four slots filled still provide dual channel capability.
