As many have mentioned, there’s no real distinction between Ubuntu Server and Ubuntu Desktop. The desktop version simply removes the extra applications and the graphical interface. You can either set up Ubuntu Desktop and remove all the unnecessary programs, or install Ubuntu Server and add the GUI. Essentially, it’s just a matter of preference.

These are your top choices. I’d begin with Ubuntu desktop and then incorporate the server components since it’s simpler in my view, rather than starting with Ubuntu Server and adding a GUI.
