Hey there, everyone! It seems like every time I try to add car mods for GTA 5 single player, the game updates automatically after installing them. Is there a mistake on my part? I'm using Open IV for the installation. Thanks!

Use the mods folder to avoid automatic re-downloading of the .rpf file.

Open GTA V via right-click, choose properties, then navigate to updates. In the dropdown labeled "Always keep this game up to date," pick only update this game when launching it. I noticed it doesn’t refresh the game as expected when I previously modified it.
