The last stable version of Windows was Windows 2000. However, most people believe that staying away from the ocean was a poor decision overall.

You're facing a common situation with older systems. After support ends, you'll need to decide whether to upgrade, downgrade, or continue using your current setup. Since some software works better on Windows 7 than on Windows 10, you might want to explore alternatives like virtualization or maintaining a hybrid environment. Your existing PCs and laptops are still functional, so you have options depending on your needs and budget.

I agree with your frustration about Microsoft's handling of privacy settings for 8 and 10 devices. It's a hassle, but manageable. Ultimately, unless you have a solid justification—like specialized tools—it will only lead to more problems as time goes on.

I strongly dislike Windows 8/10. Everything functions perfectly on my Win 7 Desktop, I’m familiar with all the essential diagnostic tools, and my production software works smoothly there. My gaming is mostly for titles like Diablo II and Fable, so I’m not concerned about compatibility issues. Sure, I have to use Windows 10 at work, but that’s just part of the job and I’m okay with it.
