Yes, there are tools available that can capture a graph showing performance metrics while gaming, such as line graphs similar to those in benchmark videos.

FRAPS can record frame rates and some folks think the Rivatuner could handle it with a bit of adjustment. The CPU I’m not sure about; I own rainmeter which logs it, but it isn’t saved—just real-time data. With a little tweaking, you might be able to save it to a .txt file, though that requires some effort.

It's named "On Screen Display." You need to install MSI Afterburner and River Tuner Statistics after setup. Once done, you can customize what appears on the screen—position, color, etc.—as shown in the example at the link provided.
