I’ll start with what you mentioned weren’t your focus—shooters from Bioshock, Borderlands, and Fallout left 4 dead. Tales from Borderlands Wolf Among Us, Tales from the Borderlands, and Tales of the Fallout series are great picks. Some of my top favorites include Tales from the Borderlands, Wolf Among Us, Dead by Daylight, Tales of the Borderlands, Dark Souls 1 & 2, Starfall: Risk of Rain, and Torchlight I & II. Those are just a few of my all-time favorites!
I've spent around 1000 hours and I have to recommend checking out Dark Souls 2. It's not just about the graphics; the story and visuals are impressive. Also worth mentioning are Bioshock Infinite, Witcher 2/3: The Talos Principle, and Vanishing of Ethan Carter. For those who haven't played yet, South Park: Stick of Truth, Brothers, A Tale of Two Sons, and Elysian Tail Braid are great picks. If your system can handle it, you could also try emulating GameCube or Wii for Zelda games.
