I'm weighing the Gigabyte Z390 Altus Pro WiFi versus the Asus Roy Strix Z390-E Gaming. I'm not focused on the price gap, just checking if both support decent overclocking and have solid BIOS updates.

Both models can be pushed to higher speeds a little, even though the Aorus chipset is better overall. Whether the BIOS is strong or not makes this comparison tricky.
