You're adjusting your BIOS settings after a BIOS update on your Gigabyte Z690 DDR4 motherboard. The temperatures have risen, so switching from auto to normal voltage seems reasonable. It's generally better to set the voltage manually rather than relying on auto, especially after a hardware change. Check for any Gigabyte-specific auto configurations that might be affecting performance and consider disabling them if they're not needed.

What cooler are you using, and how long do you own it?

It's a solid cooler, assuming you applied quality thermal paste—like the one Silver Monkey uses. You're aiming to keep things in check. Since it's an Intel chip, which tends to get warm, what are your current temperatures?

Typically around 75-80, yet I often enjoy Battlefield 2042 where it gets intense 80-87

It seems the new BIOS updates caused a temperature spike, possibly due to incorrect auto-settings. You're unsure whether to keep the core in auto or set it manually.

Just a quick note, 85 is actually pretty good. I wouldn't be too concerned. Many of the latest chips can get that hot or even warmer. As long as you keep it below around 90, everything should be okay.
