I discovered today that Win10 Pro edition lacks the annoying forced updates. I’m using Win8.1 Core (basically Home). Can I upgrade to 8.1 Pro at a lower price instead of purchasing a new version?
Sure thing... it's more affordable to purchase an updated version of Windows 7 or 8 Pro rather than buying a brand-new copy.
Upgrade to Windows 10 Home and then install Pro using a key you purchased through the Change Product Key option. If you haven’t bought it, you can obtain it from the Windows Store app or a local store once it becomes available. All your files and programs will remain safe. Windows 10 Pro can only postpone updates, not prevent them. And why do you not want Automatic Updates?
I've experienced several instances where updates nearly broke computers.
Updates are initially reviewed by Windows Insiders. If no issues arise, they move to the Current Branch. Over the past four years of using Windows PCs, I've never experienced a problem from an update. Even one broken update among thousands shouldn't justify disabling them.
