Hi there, I'm planning to upgrade my setup with a widescreen monitor. I'll be playing Skyrim without remastering and doing mods, ENBs included. I'm curious about the expected frame rate if I run the game at maximum settings on a 21:9 display (2560x1080) using a RealVision RNG on my i7-6700K. Any suggestions or advice would be greatly appreciated!

Executing RealVision on a 1080 resolution is inefficient. It would likely yield more than 100 frames per second. Most people limit it to 90–60 fps.

For a monitor at 144Hz, I suggest checking ENB options that support high refresh rates.

The display looks great without being too intense for FPS. It doesn’t matter if your screen runs at 144Hz; aim for under 100fps.

I appreciate the ENB names, but I'm curious about your preference for a maximum of 100fps.

Well there are some and they do look gorgeous but I abstained from them myself since they're not without problems as of yet. In any case even if you have the power to run at high frame rate old Skyrim is not very stable: be extra careful with load order (use something like mod organizer and stay away from any unnecessary mods to save as much cycles and memory as possible) and you should be fine but I still wouldn't expect things to go smoothly past 100fps.
