My CPU i7 8700k is overclocked to 4.8ghz and my GPU RTX 2070 Asus OC is overclocked to 2040mhz, yet I'm still achieving around 500fps in Fortnite... How can I boost my FPS? Before overclocking, I also reached 500fps.

What is the reason for requiring more than 300 fps?

This discussion was already moving quickly before it was organized.
They're really only interested in the count, not anything else.

Input lag isn't connected to fps. It's possible to achieve the highest fps while still experiencing noticeable input lag. Moreover, doubling the monitor refresh rate seems reasonable. Anything beyond that isn't worth considering.
