I just saw many new updates for Windows 10 and I'm wondering which version is best for gaming and streaming on Twitch. I'm not sure what Windows S or S N means, or what they're used for. My current specs are a Ryzen 7 1700, an ASRock Fatal1ty AB350 Gaming K4 with 16 GB RAM, GSKILL Tryden Z at 2933 MHz, and an Nvidia 1060 Aorus with 6 GB. Thanks for your time and sorry if my English isn't clear :3

the version you possess a key for mainly depends on the fact that S and N editions cater to particular areas with specific software needs—ignore them if your key isn't tailored for those regions. Home is the standard edition for everyday Windows use. The pro version mainly focuses on corporate features such as domain management. Note that the education edition is tailored for students and unlikely to be available on your key.

Unless you're diving deep into RAM or something like that (128GB+), the Home edition should work just fine for you.

Absolutely, they all do the same thing, just get the improved versions when you require those features (you're not a gamer).
