I was thinking about whether the Ryzen 3950X and the 570 gaming motherboard make a good pairing for a multi-GPU setup with three PCIe Express slots for three graphics cards. Would the built-in graphics be sufficient to handle all three GPUs simultaneously, allowing you to use each one independently? Could the system support running all three GPUs at once, dedicating one core set for Unraid and another for 5-core configurations?

3950X isn't an APU version; it lacks built-in graphics. Only APUs have the motherboard connections.

I located a better fit motherboard featuring four PCIe ports suitable for three configurations. Someone experienced in virtual machines would know about allocating a USB 3.2 connection per device using an adapter for each.
