I aim to move as much air as possible. I'm checking which 120mm fan performs best. My current thermals reach up to 2800 RPM, and I've noticed some 3100 RPM models available. Would there be any higher options?

yeah, what they said. i'm currently using a couple 200+ cfm fans, you dont necessarily want high RPMs you want HIGH CFM.
and of course you're going to trade off. i have 6 HIGH cfm 120 mm fans including 2 silverstone fans and 4 comair fans, the comairs are ~220 cfm.
BUT, they are on a file server that sits in the computer room that few people ever have need to go in. it would be impossible to have those on my main machine, just too damn loud. but they push a hell of a lot of air and if the computers are in their own room then it's great.

i'm using 6 200+ CFM 120mm fans in one of my systems.
it's a 12u rackmount case in my computer room (currently with 3 servers) and built for large storage. it holds 2.5 terabytes now, but could expand to over 10 with 500 gig drives. if i upgrade to 1 terabyte drives later, the drive capacity could exceed 20 terabytes with up to 26 hard drives.
so... yeah... i need to keep things cool, but i'm not staying in the same room with the beast

this is one reason for the high flow fans, though generally you shouldn't run them on a primary computer. unless you enjoy loud noises and wearing headphones often.
