I observed that my GPU temperatures rise significantly during gaming—around 81-82 cores and a hotspot of 99-100°C on average, with occasional peaks to 103°C. It was about 7°C lower on average compared to a few months ago. It might be related to the weather. Could this affect the GPU’s health?

The surrounding climate clearly affects heat levels. Are there filters for dust? Are they maintained consistently? Have you checked the interior of the system? The ambient warmth is moderate and safe, yes.

It's been continuously used in the air, so it's time to take it apart, refresh the thermal paste, and swap out the thermal pads.
