It's hard to find a game that fits the description perfectly. The ones that come to mind are mostly focused on exploration or building, not endless procedural space. Few titles offer a truly limitless experience, which makes it difficult to pinpoint exactly what you're looking for.
I love relaxing games like Eurotruck simulator where you haul cargo and cruise to places. You can also add your favorite tunes to the radio station. 7 days to die popped into my mind right away—just don’t stress about survival, lol!
