When attempting to launch a Microsoft app, it simply shuts down without any warning or indication, except when interacting with videos, images, or photos via Movies & TV or Photos.

I've encountered this before a few times, usually due to Windows corruption that can be resolved by performing an in-place upgrade. Another concern I've seen is a failing storage drive. I would attempt the in-place upgrade first before replacing the drive. If the drive were faulty, you'd likely notice sluggish performance and problems with non-Microsoft applications as well.

It seems the issue might be related to your Windows setup. I experienced this with Windows 10 and ended up having to reinstall the operating system to resolve it—other fixes didn’t help.
