I explored the benefits of SFTP for latency reduction. Would anyone else even detect the small millisecond delay between your two 10GB NICs in a home setup? You mainly use them for streaming and editing, not heavy gaming.

input delay could be minimized... however, if you're playing on a couch, the TV's input lag will likely be more significant than network delays. My network latency from PC to PC is roughly 1 to 2 ms using gigabit Ethernet. That’s quite a bit, considering my monitor adds about 5ms.

You won't see a difference between the two, even copper should be sub 1ms out to your gateway.
