I'm connecting via an Ethernet cable to a USB adapter, which is then connected to the USB extension cable. The Ethernet connection isn't directly using your Wi-Fi plan. This setup might be causing the speed drop since Ethernet typically offers more consistent performance than Wi-Fi, especially over longer distances or with less stable signals.

Other systems reach various speeds depending on their configuration and network conditions. Testing speed using iperf to another system is a viable method.

On another device it starts at 300mb, but once you begin using it, it matches your computer's size.

While USB 2.0 supports up to 480 Mbps, you should be able to reach that speed since it’s likely the bottleneck in your wired setup (hopefully your Ethernet is gigabit). With many links in one connection, signal loss may occur. If the USB port is shared among several devices, overall performance can drop. Also, Cat5e Ethernet cables longer than 100 meters won’t ensure gigabit speeds.
