I'm sorry, I'm going to hit my head here... Could you please ask for some screenshots so we can clearly see what's happening? The images indicate around 1000 words. HWInfo64 is suitable. T-Die represents the actual temperature you're interested in. The program also allows adjusting the update rate. Most systems run about 1000ms, but the reading might have been taken 1000ms earlier than shown. We should keep that in mind too.

There are dependable programs available and Ryzen Master isn't the sole option for tracking temperatures. HWiNFO serves as a strong monitoring solution. If you don’t notice updates from HWiNFO under heavy CPU usage, try opening the sensor window in HWiNFO. The only situation I remember was when my system lacked consistent power supply.

Lol. Ok. If you think what OP described means he is "misinterpreting" then I don't think you understand what OP described. OP also described a delayed reaction by his fans to CPU temps, however, we don't know the amount of time the CPU was under load because we don't know what the load was. We also don't know how OP has his loop setup as far as controllers go. So OP please give us some more info.
