You're pushing for a full computer upgrade now. A new GPU and better power supply later should work. The i5-8600k is sufficient. If you can afford it, replace everything—1660 Super or newer, or 2070, and a 1080 if you prefer used. Best of luck!

It's wise to begin with an RTX 2070 or 2080, upgrade the PSU, and hold off on newer CPUs for now.
