I’m expecting Doom Eternal to push my system hard, but with an i7-9700K and RTX2060 it should handle it without issues. Running it now hasn’t even hit the lowest specs, so it’s unlikely to crash or slow down.

Doom Eternal is highly efficient and should work even on older systems. I wouldn't rely on any of those "system requirements" pages. To be honest, I don't trust the publisher's MSR at all.
You're focusing on the suggested settings, not just the basics. Even though your setup runs slower than ideal, it should work adequately at high performance levels with 1080.
It seems the specs you mentioned are probably for 4K, not 9900K and 2080TI.
