Not focused on the $200 difference, I prefer the 1070. It meets all your requirements with that monitor—especially if you use a 144hz display, I’d opt for the 1080. The 1070 supports gaming at 60+ fps with ultra settings on that screen.

Regarding future-proofing, spending a bit more than $2000 now for the 1080 would be wise.

Well then, it really comes down to your requirements. Right now the 1070 seems sufficient for what you need. I’m confident it can handle most games at 60+ fps with a maximum of 1080p. If you’re concerned about needing an upgrade in 2 to 3 years, then the 1080 would be a better choice for your $200 budget. I think the 1070 should still work at 1440p with ultra 60+ fps for a few more years.
