I noticed Elite Dangerous is currently on sale. I enjoy space and liked No Mans Sky, but I'm unsure about the steep learning curve and how quickly I'd get used to it. Would I need to invest a lot of time to enjoy the game?

If you enjoy a game with intricate controls, it's incredibly enjoyable. I found it because of its challenging control system, plus the VR support. Honestly, I haven't seen a more stunning VR experience yet. This game is perfect for someone who loves immersive large screens.

I've been playing on PC for a few years now. My HOTAS setup works much better than using a keyboard, mouse, or controller. It offers solid flight mechanics and plenty of activities to enjoy. The grinding feels less intense compared to before, and the community is strong, mostly made up of EU players (though that's not a big issue). You can find some great in-game tips on YouTube, especially for space flight sims—it really adds value if you're interested.

I was an early beta adopter and played it endlessly for many months, if you like something a lot more involved than, point, shoot, run, then you will. Love it.
Yes, the control scheme is quite complex but ultimately it’s the same as a decent flight sim, but remembering you ave no gravity, so when you roll left, you keep rolling.
I’ve been off the PC for about two years so just coming back to it and see it’s changed and had a LOT of add ons, so I am looking forward to getting back into it.

It's a terrible grind, particularly without a companion to assist you initially. However, once you're in, it becomes quite enjoyable and a wonderful experience.
