You can run MacOS from your 2TB HDD while keeping your Windows games on another drive. Yes, it’s possible without needing to partition the drive, just ensure the partitions are separate and accessible.

I have limited hands-on experience with Hackintosh, but usually most operating system installations will reset the drive before setup.

Initially, you'll probably need to clear the entire disk. Once installed, you can divide the drive in macOS and employ it as a storage location for Windows games. For Hackintosh users, OpenCore is recommended.

Discussing the details, what system are you using? You might not be able to Hackintosh. Avoid running macOS on an HDD—it usually leads to poor results. For better performance, consider buying a 250GB SATA SSD instead.

I agree with this suggestion. Using a damaged HDD would lead to very poor performance and a frustrating experience.

You’ll need to fake your system details to appear as an Intel i7 6700K. Your setup looks solid with a GTX 1660, 16GB RAM, and an SSD upgrade. If you can make it work, Hackintosh might be feasible.

Refer to the provided guide for disabling the unsupported option. It wasn't something I've handled before, but it's likely you'll need to adjust connections to your GPU or manage multiple cables between monitors and GPUs depending on your setup.
