I’m building a PC for my church and everything is connected, but the monitors aren’t showing anything. I rely on them regularly with another machine. I don’t know what’s going on.

Are you linking the display to the GTX 1660 Super or one of the rear video outputs on the motherboard? The i5-11600KF lacks a built-in GPU. If you mistakenly connected the monitor, there will be no output.

I linked the displays straight to the GPU.

I need the computer to be up and running by tomorrow. I realize this might seem strange, but when I tried to secure the GPU with a clamp near the motherboard port, it broke off like the RAM clips. It’s as if the clamp was necessary for the motherboard to recognize the GPU.

Generally, if the clip fails, it's not a major issue... but it also relies on understanding how and why it broke. What force was applied? I'd consider using a test GPU to verify the board. If that succeeds, try the one that won't be available in a spare PC.

I didn't apply much effort, honestly, I assumed the clip was still closed and kept trying until it failed. I don't have an extra GPU to try, so what should I do? Consider refunding it? Purchase another motherboard? Buy a CPU with built-in graphics?

It looks like you're stuck. The best choice would be to make sure tomorrow's "church" is available and get a functional PC to cover the gap or borrow one.
Option 2 involves testing the GPU on another system; if it works, you might still need to use option one until the motherboard problem is resolved.
If the GPU fails, you should obtain a working one at a local store or another used one to handle tomorrow's tasks.

We have a PC at our church; this one is upgraded. I was just hoping to use the new one by tomorrow. The 1660 super was used in my old PC until I upgraded three weeks ago. It should still function properly.
