They aren't logging; it should simply read them as they happen and show the output.

Do they have an option to check CPU temperature? I haven’t found any mention of a program called CoreTemp for this purpose.

Afterburner V3.0.0 includes CPU temperature tracking (refer to release notes), so adjusting the rainmeter plugin should replicate this functionality. Edit: the second quote suggests switching the GPU to CPU for CPU temperature monitoring.
