I’m thinking about getting one of those adapters, but I’m worried about the impact on my electricity bill. To be clear, I’m in a suburb of Denver, Colorado.

They won't increase the electricity cost at all unless you're simply redirecting power from PoE to another device. PoE can deliver up to 30 watts under current standards. Some updated specifications support 60–100 watts, though these aren't widely available yet. PoE consumes only what it requires but provides a budget for additional power when needed, similar to a power supply unit. Unless you're connecting many devices that each draw 30 watts continuously, your overall power usage will remain unchanged.
