If you're open to Linux, Debian or Ubuntu could work well for a desktop experience. Just keep in mind that they're more suited for servers than personal use. You can run both operating systems side by side on your Mac using virtualization tools, though drivers might pose some challenges. I successfully did it with VirtualBox.

There is a list of parts the work with OSX somewhere... Hackintosh. I doubt it will work but you never know. Google should help find the list. Linux is good if you care about security, and don't like the windows look. Windows is easy.
