For a Minecraft server on the 3400G CPU, you don’t need integrated graphics if you’re using a dedicated GPU. The 3300X is a solid alternative. Your PCParpicker list looks good—consider it for further optimization.

You'll need a graphics card to display images, otherwise it wouldn't make much sense. You can operate servers without a screen, so you won't require a GPU. I'm your situation though—I strongly suggest going with the 3400G instead of the 3300x.

If the system starts without any GPU, you can connect remotely to the server. From what I understand, a GPU is required to install the operating system and boot the machine, so a 3400G would work well in that case.
