It's recommended to keep Chrome current. If you prefer not to update the app and want to prevent issues with the browser, consider switching to another browser. Just a note, even EDGE receives its own updates, as most browsers do.

When you access the Task Scheduler, do you see any Google Update tasks there? You might want to remove them.
