I would verify the CMOS battery as suggested by others; a 2017 BIOS date implies it might not be the newest version unless the motherboard lacks updates beyond 2017, which seems unlikely for an older setup. I’d turn off the Intel RST and confirm the storage mode is AHCI rather than RAID. Then attempt to boot again. If needed, reset the BIOS to defaults and try booting once more. Usually RAID must be enabled manually during initial configuration, making the current RAID settings unusual—particularly if you assembled the system yourself and didn’t activate them initially.

I came back late last night swapped the CMOS battery and reset the system to its original settings. RAID is enabled by default, so I adjusted it and had to tweak CSM—I believe it’s now set to legacy mode. Everything loaded up and the drives reappeared in the Boot Priority menu.
